Chocolate cupcakes

I have already made these three times! First two times they were gone before I could snap a photo.  I like to drizzle mine with raspberry honey. You could also put a dollop of whipped cream on top or whip up some cream cheese with vanilla extract and honey and have that as your icing.

Ingredients:

  • 1 ½ cup oats (can also use gluten free oats or any other gluten free flour)
  • 3 egg whites
  •  3/4 cup unsweetened cocoa
  • 1 cup applesauce
  • 2 tsp. vanilla extract
  • 1/2 cup plain non-fat Greek yogurt (or plain/vanilla low fat yogurt)
  • 1-1/2 Tbsp. vinegar
  • 1-1/2 tsp. baking powder
  • 1-1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 3/4 cup hot water
  • 1/4 cup honey
  • 1 tablespoon chia seeds
  • 1/2 cup dark chocolate chips

Preheat oven on 350 degrees F or 180 C.

Ground oats in a food processor. Add oats to bowl along with all other ingredients except for the chocolate chips. Blend with hand mixer. Add the chocolate chips to the batter and pour batter into a greased muffin tin. Bake about 15 or till a toothpick inserted into the center comes out clean.

Makes 12 muffins
